The objective of this workshop is to demonstrate a few south Indian breakfast recipes made with simple household ingredients and without the use of any direct heat application, meaning without the use of a gas stove or induction plate! My name is Varun Varanasi and I am a Vegan chef. I have worked with a five star hotel, a restaurant and ran my own cloud kitchen in Bangalore. It took me years of consumption, preparation and even selling foods with animal products that made me realize the importance of going Vegan. Since doing so, a few years ago, I have been actively exploring and educating myself about the various forms of plant based cooking. My journey has taught me important lessons, such as increasing the use of whole food, plant based ingredients and minimizing the use of processed foods. It has also taken me to a few interesting places across India. Most recently, I worked with a newly launched raw foods restaurant in Coimbatore.
This was an eye opening & rejuvenating experience. I learnt to prepare & enjoyed a variety of raw foods dishes, made with fresh, organic, plant based ingredients. In a short time, I was able to experience a positive shift in my health, mind and body, & the dishes I was working on were just as eye catching and tasty.
The normal cooking process (fry, boil, grill, steam) tends to destroy or alter natural enzymes and vitamins in foods. So getting more raw foods into the body ensures a better supply of these enzymes and vitamins.
The benefits of consuming raw foods are aplenty- It helps to detoxify, lose weight, cleanse, boost energy levels, and improve digestion and reversing lifestyle illnesses, just to name a few. Furthermore, it also has a reduced impact on the environment with less emissions being produced. Lastly, cleaning up the kitchen and doing dishes becomes very, very easy.
However, raw foods have unfortunately been associated with being bland and boring. In earlier times, recipes seemed to have been limited to salads, smoothies and lettuce wraps and there wasn’t much know-how on to raw-ify our much loved indian food.
Thankfully now, we have access to recipes, made with mostly whole food ingredients without the use of oils or heat that are easy to prepare and relevant to our Indian taste palettes.
