Ingredients
Avocado – sliced
Purple cabbage – shredded – 2 tbsp
Spinach/lettuce – torn for base
Celery batons – 2 tbsp
Asparagus steamed – 2 tbsp
Strawberry sliced – 2 tbsp
Steamed broccoli – 3-4 florets
Barley boiled 3 tbsp – season with salt, lime, parsley
Dressing
Sesame butter – 1 tbsp
Vegan curd – 1 tbsp
Lime – . tsp
Chilli powder – . tsp
Cumin powder – . tsp
Garlic – 1 minced
Mint leaves 5-6 finely chopped
Salt, pepper to taste
Sprinkles
Pumpkin seeds -1 tbsp
Black sesame seeds – 1 tsp
Directions
- Prepare all the vegetables for the bowl. Season the barley and keep ready. Blend all the ingredients of the dressing until smooth.
- Take a big bowl. Layer the base with the lettuce first.
- Then lay all vegetables lengthwise around the bowl. Top with a slice of avocado and strawberry. Sprinkle black sesame seeds on the avocado. And the pumpkin seeds all over the bowl.
- You can either drop blobs of the dressing on top or serve in a small bowl alongside.
