Ingredients
2 cups gobi – cauliflower
2 cups capsicum
1 cup onion
Marinate masala
1 cup Thick vegan curd
1/2 tsp garam masala
1/4 tsp haldi
1/2 tsp red chilli powder
2 tbsp Kasturi methi (fenugreek leaves)
1 tbsp lemon juice
Salt to taste
Mix the vegetables and masala together and let it marinate it for 4 to 5 hours
Ingredients for Gravy
2 cups tomato purée
1-inch cinnamon stick
2 pieces cardamon lightly crushed (elaichi)
2 small green cardamom (elaichi)
1 tsp fennel seeds
1 tsp of cumin seeds
3 cloves
1 tbsp ginger chilli garlic paste
Red chilli powder
1 tsp jeera powder
1 tbsp coriander powder
1 tsp of jaggery
1 cup cashew paste
Salt to taste
Water
Directions
- Heat the pan and add cumin, fennel seeds, clove, cinnamon and cardamom.
- Roast them for few seconds and then add ginger garlic paste.
- Add tomato purée, jeera powder, coriander powder and chilli powder and let it cook or 5 to 7 mins.
- Add jaggery and cashew paste and cook for 2 mins
- Add salt and water to make the right consistency of the gravy
- Garnish with coriander
- Serve it with love
