Ingredients
200 gm tofu
8 to 10 mushrooms halved (don’t forget to leave it in sun for 1/2 an hour)
2 big onions steamed
1/2cup cashew soaked (8 to 10 hours)
1/2 cup peanut curd
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Coriander to garnish
Dry masala ingredients for tadka
1-inch whole cinnamon
2 bay leaves
3 cloves
2 dried red chillies
2 pieces of cardamoms
Directions
- Heat the pan add the dry masalas until aroma arises
- Blend onion and cashews and salt and add to the masala
- Add beaten curd
- And keep stirring continuously to avoid over heating and lumps
- Cook for 5 min add coriander powder, garam masala and taste if needed add salt
- Add mushrooms and tofu
- When ready remove cloves and cinnamons
- Add coriander
- Serve hot
- Serve it with love
ADVICE
The best way to use mushrooms is to keep them in the sun for an hour or so before using, as mushrooms are rich in ergosterol (pro vitamin D) and the action of sunlight or the UV rays changes the the pro-vitamin D to ergocalciferol vitamin D2 which is essential for our bones and teeth
